Grilled Watermelon Salad

Tossed with balsamic vinaigrette, fresh herbs and tangy feta, this light and fruity watermelon salad makes a delicious side dish for summer barbecues and picnics.

Total Time: 25 minutes 
Serves: 4

Main Ingredients

•    1 seedless baby watermelon, cut into 1-inch-thick slices and rinds removed
•    3 tbsp balsamic vinegar
•    1 tsp liquid honey
•    1/4 tsp salt 
•    1/4 tsp black pepper
•    1/4 cup olive oil
•    4 cups packed baby arugula
•    1/3 cup crumbled feta cheese
•    1/3 cup sliced red onion
•    2 tbsp finely chopped fresh basil leaves
•    2 tbsp finely chopped fresh mint leaves
•    Lemon or lime to finish


Instructions 

Step 1
Preheat grill to high heat. Grease grate well. 

Step 2
Grill watermelon slices, turning once, for 1 to 2 minutes or until well-marked. Let cool completely and chop into 3/4-inch cubes.

Step 3
In small bowl, whisk together balsamic vinegar, honey, salt and pepper. Slowly whisk in olive oil. 

Step 4
In large bowl, toss together arugula, grilled watermelon, feta, onion, balsamic vinaigrette, basil and mint.

Tips: 
To add a tangy accent, serve salad with pitted black olives and a squeeze of lemon or lime to finish.

For a simple summer dinner, top with grilled chicken or fish.
