Chipotle black bean dip
PAIR THIS DELICIOUS DIP WITH TOPO CHICO HARD SELTZER AND EL RANCHERO CHIPOTLE TORTILLA CHIPS
1 tablespoon canola oil
1 cup chopped white onion
2 cloves garlic, peeled and minced
2 15-ounce cans black beans, drained
1 chipotle pepper
2 teaspoons lime juice
½ teaspoon cumin
½ teaspoon kosher salt
Cotija cheese, crumbled
1 tomato, diced
Cilantro, chopped
Tortilla chips, for serving
Heat oil in a skillet over medium heat. Then add the chopped onion and garlic and sauté until tender—about 5 minutes.
In a food processor or blender, purée the sautéed onion and garlic, beans, chipotle pepper, lime juice, cumin and salt until smooth. Transfer to a serving dish and garnish with cheese, tomato and cilantro, if desired. Serve warm or at room temperature with tortilla chips.
